Let's start with the CRUST
-2 cups crushed oreos
-1 Tbsp sugar
-1/4 cup melted butter
Mix them together and press the mixture into the bottom of a 9 inch springform pan.
Okay, so funny story, I'm too cheap to buy the precrushed oreo cookies, so I just buy a bag of Oreos and crush them myself (Comparatively, it was more expensive to buy the crushed ones)... This particular time around, I had one casualty T_T....
Since then, I have bought a mortar and pestle...T_T
Next, we must prepare the raspberry portion~
-10 oz frozen raspberries
-2 Tbsp granulated sugar
-2 tsp cornstarch
-1/2 cup water
Combine all 4 ingredients in a saucepan and boil for 5 minutes until the sauce is thick. Strain the sauce to remove the seeds. Set aside~
Now, time for the cheesecake...
-2 cups white chocolate
-1/2 cup half and half cream
-24 oz cream cheese, softened
-1/2 cup granulated sugar
-3 eggs
-1 tsp vanilla extract
Preheat the oven to 325 degrees Fahrenheit.
Melt the white chocolate with half and half cream, stirring until smooth..
In bowl, cream together cream cheese and 1/2 cup of sugar until smooth. Beat in eggs one at a time. Blend in vanilla and melted white chocolate mixture.
Pour half of batter over crust, spoon a few Tbsp of raspberry sauce over batter, pour remaining cheesecake batter into pan and spoon a few more TBsp of the raspberry sauce over batter. (Swirl the batter with a knife of something to get that marbled effect ^^" )
Bake for 1 hr or until filling set. Cool and refridgerate for 8 hrs before removing from pan.
